About Remi

Master Sommelier Remi Bancal hails from the city of Nîmes, in Provence, France. His career in the hospitality industry spans many decades and also many areas of expertise, from the Ritz in Paris, to leading Melbourne and Sydney restaurants, before choosing Tasmania as the base for his personal enterprises.
In 1987 he moved from France to Australia, and for 7 years was manager sommelier at Mietta's in Melbourne at the height of its success. This, and his years as head sommelier at the renowned Banc restaurant in Sydney, is testimony to his depth of knowledge and appreciation of fine wines, French, Italian, German and Australian.
He has worked with Michelin-star chefs from around the world; and is a master when it comes to cooking the authentic cuisine of his native Provence.
In 1999, with his wife, Ginette, Remi created the luxury retreat, Calstock Country Guesthouse, near Deloraine, Tasmania, which, under their direction, enjoyed a prestigious reputation for its ambience, luxurious appointments, and fine dining. Among its many accolades was winning Australian Gourmet Traveller Magazine's Best Bed and Breakfast award.
Now, his latest project is Remi de Provence, a unique combination for Hobart's discerning diners. It comprises Bistro, Fine Wine Centre, Wine Bar, and, a particularly French concept, a cave à manger where patrons can purchase from the extensive selection of cheeses, pâtés and terrines on offer.
The Bistro at Remi de Provence is a true French bistro with a menu which showcases the authentic cuisine of Provence, with an à la carte menu, daily specials, and the Chef's special 'Tasting menu' devised by Chef de Cuisine, Joel Robert. The Fine Wine Centre at Remi de Provence carries the most outstanding selection of fine Australian and imported wines and French champagnes.
As his signature enterprise, Remi de Provence is a culmination of the skills and experiences which Remi Bancal has honed and perfected over the years.
